recipe tried and tested on 4th Nov 05

well anyway here’s the recipe first..
2 cups (300g) self-raising flour
1cup (150g) plain flour
1 teaspoon bicarbonate of soda
1 cup (200g) firmly packed brown sugar
2 eggs
1 1/2 cups (375ml) milk
3/4 cup (180ml) vegetable oil
1 cup mashed overripe banana
1 cup (120g) finely chopped walnuts
Topping
1/4 cup(50h) firmly packed brown sugar
1/4 cup (35g) plain flour
40g butter

Preheat oven to moderately hot (180-190 C). Grease muffin pans.
Sift dry ingredients into large bowl, stir in combined eggs, milk and oil.
Stir banana and half of the walnuts into the muffin mixture. Sprinkle muffins with remaining walnuts and topping.
For topping, combine sugar and flour in small bowl; rub in butter
Bake in moderately hot oven about 20 minutes
Makes: 30 (depending on size of muffin cups..)

I excluded the frosting / icing on top, I just used icing sugar for a little sweetness


You can roast the walnuts first with butter to make it more aromatic. Otherwise, Chocolate chips would add some points to this muffin!
