I had the ready-made Pastry Puff, at first I wanted to make some Portuguese Egg Tarts, but, I was thinking of some Apple Strudel with custard. So, I made it!
Appple Strudel recipe
2 Granny Smith Apples, cubed
a handful of raisins / sultanas
half cup water
1 tsp cinnamon
Boil water, add the choped apples and cinnamon. Stir till the apple's soft, but not mushy. Then add raisins. Stil for a minute more. Let it cool
Roll out the thawed puff pastry on a lightly-floured board. The pastry should be about 2-3mm thick. Prepare two of the pastries, one as the base, another to cover up. Pour the apples and raisins on the base, then cover with another layer of puff pastry. Press the sides together with a fork so it's firmly attached. Brush with some egg wash, bake in the oven for 30 mins at 200 C.

Vanilla Custard
100 ml whipping cream
200 ml milk
1 1/2 eggs (1/2 the eggs used for brushing the pastry)
1/2 tbs corn starch (Maizena)
40 ml sugar
1 vanilla pod OR 1 generous tbs vanilla sugar
Measure all the ingredients for the custard into a non-stick pan. Heat, mixing all the time, until the sauce thickens but don't let it boil. Move from heat and put the pan into cold water and let the custard cool down, mixing it every now and then. If you used vanilla pod, remove it before serving the custard. You can also put the custard into a plastic container when it is cool and store it in the fridge until you are ready to eat (it thickens in the fridge which is good, too).


custard was really good. especially if u've put it in the fridge and it's thickened.
The ready-made puff pastry was not as good as the self-made one. It's abit hard compared to the self-made ones. Self-made ones are quite a hassle to make cause it's gonna take a few hours. But it really is something one should try.
And look! there's an aspiring young chef!!

wow, it must have been apple strudel weekend or something because Suyin also made some apple strudel!!
Well yours looks yummy, especially all the custard spilling all over the strudel. I love custard during the winter, its so conforting.

hmmm strudel with puff pastry; Wouldn’t it taste more like an apple pie though? Especially with the custrad sauce….sounds liek a delicious apple pie! haha I used to make my apple pies wiht puff pastry until i discovered a recipe for shortcrust!
Good variation though! looks delicious!
