RTW #3 - Cabbage

Crisping Cabbage with salt 

Soak whole cabbage in ice cold water. Dissolve a heaping tablespoon of salt in a large bowl of water, soak the cabbage for 5-10minutes, rinse it briefly with cold water, and then dry it with paper towels before grating or chopping it.
