Upon request of my parent's friend, I made 2 lemon cheesecakes today. one for them and one for us to eat cause my mum said she wanted the lemon cheesecake too.
So, pretty easy, I've made this for quite a few times because it's just delicious.

Let's have a slice shall we ?
After making it for so many times, I think the texture's improved. Cheesecakes has gotta be soft, smooth and creamy yet firm but not lumpy or jello-like. Well, practise makes perfect. So to all those who wants to tryout, don't give up if u fail. If u've not failed, u've not tried anything new. Just whack it, it's just cream cheese.
This is the 4th cake I've made this week, 2 more coming up, and a box of choc chip cookies to make
and how does making meringue disk at 1.30am sounds to u ?
