three different type of cookies were made in a span of about 4 hours ? (minus the demo, yaking, talking, cleaning time)
First up, Sables Hollander (chequered cookies)
This was a bit of a hassle to make cause u neeed to measure them, cut them nice and straight, then chill them, then cut and stack them, then chill them, then slice them and bake them. hrm… that sounds alot of work
Luckily mine turned out well, neat and nice. haha (can be improved still)

It’s chocolate and vanilla. one has a chocolate border, another one has a plain vanilla border.

These are Viennese biscuits (Piped sables)
It has a bit of rum in it and there’s also almond meals. These cookies are to be piped out into cute lil florets or patterns

These are Sables Diamantes. which are really nice I think (oh everyone says its nice . haha)
And so, I’m going to put up the recipe for this. It’s easy to make and nice to eat!
Ingredients
225g unsalted butter, soft
100g icing sugar, sifted
30g egg pulp (means, break an egg, whisk it, and weight 30g out)
2 zest oranges
few drops of vanilla
pinch of salt
320 bakers flour / plain flour
Method
Preheat oven to 180C. Cream butter and icing sugar, make sure the butter is not too cold or else it’ll be hard to cream it. Either heat them in the microwave, or if u’re in a hot weather, just take it out from the fridge a couple of hours before u use them. Add egg pulp gradually. Add in orange zest and vanilla. Mix till it’s well incorporated and not lumpy. Then add in dry ingredients and mix well. It will be like a soft dough. Ok, divide into 2, then roll them into 3-4 cm diameter logs. Lay a baking paper, sprinkle coarse sugar on it, then roll the dough like sushi. make sure u use coarse sugar caue it’ll be crystalized when u bake them and it’ll give it a crunchy texture when u eat them. Keep them in the fridge for about 20 minutes or till it’s hard but not too hard. Take them out and slice them about 1cm thick. Half some cherries and place them on top of the dough before u bake them in a 180 C oven for about 10 minutes.
It’s quite easy I think, so do give it a try
