THE blueberry muffins were made a few days back when we had out little Indian Feast at home. I got hold of some really cheap and nice blueberries for only $4.99 (by far the cheapest I’ve seen, the rest were like $7.99 or 8.99) Alright, the recipe is really simple, so are the steps.
Recipe
2 cups self-raising flour (I used all purpose flour and added about 1/4 tsp of baking powder)
1/2 cup sugar
2 eggs
1/3 cup oil
1 cup sour cream
1 cup blueberrues
Whisk oil, eggs and sugar till well incorporated. Add in sifted flour and mix well. Then, fold in sour cream. Lastly, add in the blueberries. Scoop out into muffin pans. Bake at 180 C for 25 - 30 mins. Makes about 12

Maybe I should call it purpleberry muffins. cause it looked like purple to me
With the sour cream, the texture is smooth and abit dense. Well, probably because of the different type of flour I used anyway. And the blueberry juices left on the muffin pan were a pain in the a** to clean. So, use non-stick pans please.
