Bruschetta with Tomato, Basil and Avocado

With the bread I made last week, I made some Tomato Bruschetta with it.

With the bread, I pop into the toaster / oven with a dash of butter or olive oil, or even garlic butter, or even non. But I can’t eat bread without butter…

Then, dice some tomatos (I used cherry tomatoes as I had some spares, plum tomatos or those sweeter ones are advisable to use to make bruschetta cause it’s sweeter, and not sourish) Anyway, chop some basil leaves as well, and a small onion, just to get the crunchy and onion-y flavour. Then add pepper and balsamic vinegar, about 1 tbsp (depending on serving). Just try out the taste to see if it’s up to your liking.

(I really can’t write exactly how much I put into, it’s all about your taste palate..)

Then, scoop tomatoes out onto bread, and serve. Add on avocados if u like. I’m seeing avocados (too much btw) at work, thus kinda urged me to buy one too!

As for the bread, you could use brioche or baguette, as the crust is crunchier and the mid is soft. But well, crusts go hard when they’re toasted…….. eh ?

i would prefer to put the chopped stuff on top then lay some cheese then only go baked them, to prevent those bread from going too crusty …
