Happy Birthday Sherry

It was my housemate’s birthday on Friday, so a bunch of us, secretly planned a surprise party at our place. So we’re to ’surprise’ her after her dinner with her in-laws.. Yay! we succeeded, of course ;)

This would probably be like my first cake that I make, out from school since I came to Sydney..  The candles are cute right ? Anyway, this is a tiramisu, except that with a twist. It’s not a coffee / chocolate one, but a baileys / milk one. Knowing the  fact that I’m really bad at making tiramisu, here, I was hoping that I won’t screw this one up, cause I din’t have any back ups. Oh well, perhaps to go out and buy a cake. Haha..

Recipe

small meringues (recipe here, if lazy, buy from stores)
2 eggs , separated
90g caster sugar
3235g mascarpone
150 Baileys (In the original recipe, it calls for Bacardi)
200g milk
18 savoiardi

Heat the oven to 140 C to make the meringue.

Beat egg yolks with sugar until pale and mousse-like. Fold in the mascarpone gradually and then beat until incorporated. Whisk 1 egg white (yes, you don’t need the second one) until form and fold into mascarpone mixture.

Mix Baileys and milk in a soup plate and dip the biscuits in the mixture just long enough for them to soften. Lay about 9 moistened biscuits in the dish and spread over about a third of the mascarpone mixture. Sprinkle with the meringue crumbs. Dip another 9 biscuits into the Baileys and milk as before and then arrange them on top of the meringue crumbs. Spread over about half the remaining cream, cover with clingfilm and refrigerate. Put the remaining cream in a closed container and refrigerate also. Leave overnight. Or, just pour the mixture into the cake and leave overnight, which was what I did.. If you opt for the first,smooth the remaining cream all over the puding and decorate with meringue or berries before serving. Serves 6

I arranged some savoiardi around the cake to make it look neater. At first, it looked a tad bland cause of the savoiardi, so I ransacked the whole house to look for some ribbons and tie it to look like a present, but only edible hehe ;)

It tasted really well, the saviaordi soaked in Baileys and milk really worked. It gives the cake a new type of flavour. Haha, but it was kinda strong. Anyway, everyone enjoyed the cake, and I’m pretty happy about it

I just decorated with some sweet grapes and strawberries and meringue. Blueberries are not really sweet so, some grapes would be good :)

looks like yum! i just made tiramisu yesterday as well, but was really bad at trying to decorate it. :(

By the way, do u know whereabouts I can get cake boxes in Sydney? Only managed to find the cardboard base but no cake boxes :(

Thanks swee san! This is the very first homemade (yet 5 star)birthday cake that i have received. Tiramisu is not my type of cake, but this one is just fantastic! Probably, this mascarpone filling is heavier & denser. And, it’s nicely presented as a wrapped
present. I’m touched….
