Simple, easy, quick, pretty, delicious

I made some meringue for a birthday cake (which I’ll post about it later…) It calls for meringue, so, I had to make some meringue. Well, actually after making this batch of meringues, I’m quite tempted to make some macarons (ho ho ho) Maybe some time later ye.. Anyway, this is relatively easy to make if you have a mixer at home. Or else be prepared to stand and whisk the eggs with a whisk n your hands.
Makes about 15 meringue kisses
2 egg whites
120g sugar ( I used raw sugar, which has a tad of cane flavor in it, and sliglthy brown in colour)
Whisk egg whites till stiff peak, means, when you turn the bowl around, it beats the gravity and nothing falls out from the bowl. Add in 1/2 amount of sugar and whisk till there’s a satiny gleam. Then fold in the rest of the sugar gently. Pipe them out on to a baking tray, lined, with a piping bag. If you don’t have any, just pop the meringue to a plastic bag then cut the end corner and slowly pipe them out. Bake in a 140 C oven for about 40 minutes, or till they’re firm. TUrn the oven off and just leave the meringue inside to cool. After that you can keep it in a airtight tin or, eat them as it is
For the filling, I melted some chocolate and mix in some icing sugar to thicken the chocolate. Spread some chocolate between the meringues and stick them together
