Lamb, red onion and pine nut stir-fry

lamb stir fry

Recipe

1 tbsp oil
1 small red onion , cut into wedges
2 cloves garlic, crushed
300g lamb fillets, trimmed and thinly sliced
1 tbsp pine nuts
100g asparagus or green beans, trimmed
1/3 cup red wine
1/2 tbsp brown sugar
1/2 cup sage or mint leaves
Heat a wok or large frying pan over high heat. Add the oil, onion and garlic and cook for 1-2 minutes or until the onion is tender. Add the lamb and pine nuts and cook for a further 1-2 minutes or until golden. Add the asparagus/beans and combine red wine and sugar. Cook for 1-2 minutes or until the greens are tender. Add in sage or mint leaves. Served with spaghetti. Serves 2

hmm rare occasion for the spaghetti hehe..u are getting creative ;)

mm.. thats cause i’m lazy to cook rice :P
