I don’t know why but I’ve started making curries and its like.. all the time! At least once a week. But the curries I made are usually made with curry paste then added with coconut milk / coconut flavoured evaporated milk, and then added my own ingredients like chicken / prawn / vegetables etc.
Here’s a version of curry with prawn and sweet potato, it’s abit Thai-ish cause kaffir lime leaves and some fish sauce were used. AND it is.. spicy!

1 tbsp red curry paste (or yellow or green)
250ml coconut milk
1 tbsp fish sauce
1 tsp sugar
200g sweet potato, peeled and cut to chunks
200g prawns, peeled with tails intact
some veges if preferred
2 kaffir lime leaves
Heat pot / pan with some oil, lightly cook the curry paste for 2 minutes. Add in coconut milk, fish sauce and sugar and cook for3 minutes. Then add in sweet potato and french beans, if used. Let it simmer for about 7-8 minutes. Then add in prawns and broccoli or okra (ladies finger). Simmer till prawn is cooked and sweet potato is soft. Add kaffir lime leaves and leave for another 4 minutes or so. This curry is thick and there isn’t much liquid. For more liquid, either add water or more coconut cream. Serve with rice or bread.

Yummy recipe – I can’t live without onions and lots of garlic which I added and used spinach instead of the french beans (which I shall use the next time). My husband absolutely loved it!
