Black Forest Gateau

We all know what black forest is. Chocolate sponge layered soaked in kirsch / other liquor, layered with cream and maraschino or sour cherries and then garnished with whipped cream and chocolate shavings. Schwarzwälder Kirschtorte, or rather the Black Forest Gateau is a dessert from Southern German, and we all know, it’s a popular dessert ! Traditionally, Kirsch is added to the sponge, although other alcohol like rum may be used. Kirsch is a clear brandy made from double distillation of the fermented juice from the small black cherry. The cherries used recently can be either sweet or sour, but in the past the sour morello cherry was used with the pit crushed down. The morello cherry was originally grown all around the Black Forest so that is believed to be where the drink originated from. Hence, maybe why the gateau was named after the forest!

The cake is built to the shape like dome. I guess cakes that are dome-shaped look pretty attractive from the normal ones, but creaming a dome shape is not easy when u’re rushing for time. Anyway it was still managable. haha. Usually if I order cakes for birthday or make any, black forest is not my first choice at anytime, cause no.1, I think that it’s quite a boring cake, and no.2, some of them really just have tones of cream rather than anything else.

But this unusual shape of black forest, might get me into the whole idea of Black Forest Gateau - making and enjoy eating it. hang on , *looks at waist* OK, maybe not the eating part *tsk tsk*

This Black Forest, however has a twist to it. An additional layer of meringue is added to it in between the sponges.

So it’s, sponge, cherries, sponge, meringue + cherries + cream, sponge, cream, choco deco

yum!

Looks great, nothing like the black forest cake here in the black forest though - just in case you didn’t realise.
