Don’t worry, it’s not another flavour of ice cream, neither anything weird. They’re German biscuits that are spiced and peppery. It may not be as authentic as the traditional one, but I liked the flavour and crunchiness of this Lebkuchen.
I made them as Christmas gifts for my friends that came over for dinner on the eve. I packed them in little boxes along with some sweets.

It can be hung up as christmas ornaments on the tree as well as the texture is not like shortbread (it’s not fragile) and the aroma of the spices just makes your home smells really good.
Lebkuchen (from Nigella Lawson’s How To Be a Domestic Goddess)
300g plain flour
pinch of salt
1 tsp baking powder
1 tsp mixed ground spice
1-2 tsp freshly ground pepper
100g unsalted butter
100g brown sugar / dark muscovado sugar
2 eggs beaten with 4 tbsp runny honey

Combine dry ingredietns in a processor or big bowl and mix. Add in chopped butter and rub with hands till crumbly or just pulse in the machine. Then add the liquid - eggs and honey mixture gradually till it comes together like a dough. It may not take all of the mixture, so becareful with it. Form 2 discs and put one, covered in clingfilm in the fridge while you get started with another. Preheat oven to 170 C.
Dust surface with flour, roll out too 5mm thick and cut out with cookie cutters. If you want them as ornaments on the tree, take a nozzle / chopstick and cut a hole just below the top of each biscuits (for the ribbon). Arrange on baking sheets and bake for about 20 minutes. It should not be doughy and slightly hard when its baked. Transfer to cool on wire rack. If you’d like to add glace icing, mix abt 3 tbsp boiling water with 300g seived icing sugar and stir till its glosy and thin. Ice the cold biscuits with teaspoon and hang them around, or better, eat them

I didn’t put any icing unfortunately. Since I thought the sweetness was alright, I’m not gonna add icing on it. (In a way, it’s healthier) *winks*
