Project Iced 4 : Manise

is the name of this ice cream .. Sorbet. Sounds abit absurd though but it’s actually a method of creating new names ala Hollywood style (Taking names from couples and joining them together to a word eg Tomkat and Bradelina, or whichever combination) so Manise is a combination of Mango and Star Anise.

Mango and Star Anise sorbet recipe

140g caster sugar
2 star anise (dont be greedy and put 3, as the flavour of 2 is just right)
1 tbsp lemon juice
4 large ripe mangoes, chopped
2 egg whites

Put sugar and 1 1/4 (310ml) water and star anise in a saucepan over medium heat till sugar dissolves. Bring to the boil, then reduce the heat and simmer for 1 minute. Set aside to cool to room temp, then add lemon juice.

Puree mango (I used pre-made mango puree (bought in frozen blocks) - about 400-500gm of mango puree) in a food processor until smooth. Strain the sugar syrup into the mango and process until just combined. If using mango puree blocks, heat them in saucepan and stirring so it doenst burn. Then add to the sugar syrup.

To test the sweetness of sorbet, the best kinda of equipment available is…. your tongue. Or if u’re professional enough, a Refractometer. If it’s too sweet, dilute with water and vice versa. But if you’re adding sugar, remember to still keep the mixture on heat for obvious reasons. Otherwise, sugar syrup may be used.

Then, leave to cool and transfer to ice cream machine. Meanwhile, lightly whisk the egg whites to medium peaks and add while the ice cream is churning. The egg whites are optional just to give it some body. Then freeze for 4 hours or overnight. Store in freeer until ready to serve. For me, I dont know why I always have to either bring my ice cream down to the fridge before serving, or just pop into the microwave for 5 or 6 seconds so it’s easier to scoop.

SEe, the thing I like about sorbet is that it’s so simple. just sugar syrup + whatever fruit puree or flavours.

The flavour of star anise actually adds a slight bitterness to this mango sorbet, but yet it’s also quite refreshing. Interesting combination of star anise and mango indeed

Its so beautiful. R v suppose to admire it or just eat it !?

Such a vibrant colour! I love the photo and I shall be trying this as soon as the weather warms up a bit :)
