Falling Leaves

Ah, I just realised this cake came just in time for Autumn! summer’s sorta gone and the weather’s starting to get a lil chilly in the morning and and night.. Which means, no shorts and tees ? or even bikinis ? *not that I wear them anyway*. eekkss

Yeah, Feuille D’Automne. Dont really know how to pronounce but it sorta means autumn leaves.

It’s made of 3 layers of Almond meringue and Chocolate mousse in it.

HEre’s a recipe for the Chocolate mousse. Just like the previous L’Exotic Charlotte, feel free to use the mousse in whereever you feel like. Basic’s the key ;)

Chocolate mousse recipe

250g Dark couverture chocolate
15g cocoa powder
150g unsalted butter
125g egg whites
50g sugar
150ml cream

Melt chocolate and cocoa powder in a bain marie. Add butter and melt.  Beat egg whites till soft peak, add the sugar and whip till medium peak. Fold meringue to the melted chocolate. Whip cream till soft peak and add to the mixture. Do not overmix and use it straight away before it sets.

I quite like this recipe of chocolate mousse as there’s a hint of cocoa powder in it to unsweetened it. Well that’s probably also because the almond meringue is naturally sweet. Most meringue = sweet. heh

The layered mousse cake is then covered with chocolate fans and some leaves made by painting some tempered chocolate on … well, quite obvious, leaves!
