yours truly has finished her assessment.
with flying colours!! HAha.. just kidding. But I had good feedbacks tho.. *wheeeeeee* :D

Ok, the deco could be better but .. limited ingredients
Anyway, it’s my gateau for assessment. Sorta has to be own creation based on LCB’s recipe, can be modified. And the most non-basic ingredietns we have is gelatine, cream, cornflour, cocoa powder and strawberries. The rest are like milk butter eggs flour stuffs. So, I made a Caramel Mousse with Rum and Vanilly bean Jelly with Chocolate Joconde soaked with Rum Syrup. Topped with Cocoa Glaze and garnished with Almond tuile. *will have a more detailed individual post for it sometime later*

My chocolate showpiece I’m almost quite proud of.. (Yeah, cause my butterflies broke. They’re suppose to be on the fan. And the flower could be bigger)
I was so afraid that I couldnt think of an idea cause my brain has been literally DEAD for 2 weeks. Creativity level was VERY LOW. But luckily I managed to sketch something out after brainstorming on the net (thanks to google) . And funny thing is, thank goodness the chocolates didn’t hate me today (during the exam). I was trying to temper my chocolates at home the night before, but it just wouldnt temper. I was keeping my fingers crossed hoping that I won’t have problems tempering during exam. Luckily, it was a breeze. I mean, I was bloody shocked when I finished 30 mins before time.
Awww, sweet
THere’s no such feeling as satisfying as having your chef saying “u did a great job”..”fantastic”.. “Yumm…” “Best cake I’ve ate so far (in the exams la of course) ” … I guess hardwork does pay off. But I wouldn’t mind having this kinda exams, than having to read 3 books to do a paper in Uni. *duh*
First time ever I FEEL SO DAMN GOOD afterexams.
On the bad side, that means…..
I have one more week to go, and I’m done .. seriously DONE with LCB. I will miss the days in kitchen ALOT, infact I’m already missing it, watching the chefs demo, creating mess, burning fingers (ok I don’t miss that), gossiping with friends AND creating cakes and gateaus with commercial equiptments. 9 months. Too short. But, it was a fantastic final 3 months (Superior) because we had a super awesome chef*
*we define him as a Pentium 6 with 2GB RAM
But he’s our (maybe just me and some others) inspiration in class.. really
Ok, damn hungry now.
Cheers
