First up, I decided to make green tea ice cream. I’ve always wanted to make during the days when I was in Sydney, but I just didn’t want to but a huge packet of it because I know I wouldn’t be able to finish it, knowing I’m going back home in just a couple of weeks. Furthermore, the amount of yolks in this ice cream is crazy. So I decided to spare my cholesterol level. Anyway, this time around, because of the leftover yolks from the Pavlova, I was stern to make this ice cream. (also in conjunction with the Merdeka Eve Potluck)

Matcha Ice Cream
(makes ~ 1L)
1 1/2 cups milk
2 cups cream
half vanilla bean, split lengthways and seeds removed
9 egg yolks
140g caster sugar
1 tbsp matcha (green tea powder)
Pour milk, cream and scrape vanilla seeds out into a pot over medium heat. Whisk eggs and caster sugar till combined. When milk and cream is lightly simmering, pour half into the yolk mixture and whisk. Pour back everything into the pot and stir with a whisk for a couple of minutes. The cream should’ve thickened and coats the back of a wooden spoon. Do not allow to boil. Remove from heat and stir in green tea powder. Add in little drops of green food colouring to get a jade colour otherwise, it’s hard to believe it’s green tea ice cream; colour wise.
Pour in a clean container / jug and leave in fridge to cool. I usually put i overnight in the fridge. Reason why; I use a small home ice cream machine so it’s vital to have both the canister and the cream chilled enough to be churned. Time usually takes about 20-40 minutes to churn with a homemachine. The longer it takes, there’d be more crystallization thus the texture of the ice cream would be grainy and not smooth. So imagine if you put a hot mixture into a ice cream machine caniste, it’s gonna take FOREVER and u’re gonna end up having granita instead of ice cream. HAHA. Unless of course you have a huge machine, it’s gonna take at least 24 hrs to make ice cream with a home machine.

Dont ask why green tea ice creams are not green. Because if it is, you should be afraid. They’re colourings

hi..i see that your post is a couple of years old now, but i got referred to it after i posted my own ice cream story just now. i made green tea ice cream yesterday and just wanted to comment saying that the green colour actually DOES come from the tea…but maybe you didn’t use enough? i see your recipe called for just 1 tbsp and mine said to use 4, so maybe that’s it? i got a gorgeous gorgeous deep green and the flavour was unbelievable. home-made ice cream rocks:)
